I’m always dousing my chicken with buffalo sauce and have made many pasta dishes with chicken and buffalo sauce,
but this one,
oh… this one is CREAMIER and tastier and a real crowd pleaser!
It’s easy to prepare and can feed a whole family fast.
I typically mix the buffalo sauce with Greek yogurt, but not this time,
I wanted more of a smooth creamy sauce and since chicken broth is my best friend I decided to make a sauce that would coat the pasta and chicken well and give it a more comfort food flavor.
Chicken broth has a way of doing that, don’t you think?
I cooked chicken in chicken broth and then shredded it with a fork. I cut the chicken in half so it’s not so thick and cooks quickly. Often I have chicken in the fridge all ready to go, but not this time. So while I was waiting for the water to boil for the pasta, I cooked the chicken. This meal is ready pretty quick about 30 minutes.

Especially when you have very little of it, like on a Sunday afternoon when you are heading out the door and everyone is hungry, or weeknights when everyone is going in a different directions with sports and work schedules and all the hectic school homework, needing a book for some report. If that isn’t going on in your house, well at least you now know what’s been going on in mine.

Another way to go, it to plan out that you’ll know it’s going to be crazy and make this ahead of time and have it ready to heat up. That did not happen in my house this week. But the leftovers were gone fast, they always are!
Heat up the chicken broth and cornstarch, then whisk in the milk or cream and add in the BUFFALO SAUCE.
There are many brands of buffalo sauce out there, just pick one and give it a try!
Simmer the chicken in the sauce for a few minutes.
Then toss with the pasta and it’s ready to serve.
I like extra buffalo sauce drizzled over the top!
This is a perfect meal to have in the fridge for whenever someone is hungry, just heat and eat. My family loves to see a one dish meal like this with everyone’s crazy schedules it’s not always possible to eat at the same time and this is one dish they never get tired of.
My kids are always asking for buffalo wings, and while I love them. I do not make them often, but this I make all the time and I’m happy to have taken some photos this time to share it with you.
This could be labeled the perfect teenager dinner! They devour it.
Now let’s talk about blue cheese, I LOVE it. I have since I was a kid. I have no idea why my kids don’t like it, but since they don’t I don’t top this off with any. But give my kids a drizzle of ranch on top of this and you guessed it, they love it. So if you have a ranch fan on your hands. Feel free to drizzle some on!

Creamy Buffalo Chicken Pasta
Ingredients
- 1 lb spiral pasta
- 2 cups cooked chicken
- 1 1/2 cup chicken broth
- 2 teaspoons cornstarch
- 1/2 cup milk or heavy cream
- 3/4 cup buffalo sauce
Instructions
- Cook pasta according to package directions.
- Shred chicken into small pieces.
- Mix chicken broth with cornstarch.
- In a pan heat that mixture, then whisk in milk or heavy cream (I prefer heavy cream) and buffalo sauce.
- Add a little salt and pepper to taste.
- Mix the chicken into the sauce and simmer 2 minutes.
- Add the sauce mixture to the pasta and serve with a drizzle of buffalo sauce.
What is your fav brand of buffalo sauce? There are too many.
Note about blog: the type shows up very light gray on a white background, and the font is so tiny! Any tweaks you can make to this?
I often use Franks Buffalo Sauce, and when that is not on hand I will use Louisiana Supreme Chicken Wing Sauce. Sweet Baby Rays Buffalo is another I’ve used and liked. Sorry you’re having trouble reading the size and color font. Yes, it is adjustable on my end to change it. The font size is standard, I find that no matter what device, I’m able to zoom in to view something bigger, on cell phone, tablet or on my computer (just pinch and zoom out, I use a trackpad and do the same) thanks for your input, I will consider it.
Chicken are one of my favorite things to add when I want lots of flavor and less calories. Great idea! I can’t wait to try this!

My sauce is very thin. Is it supposed be like that?
mine was not thin if it’s not thick enough, use more cornstarch mixed with some milk, water, or chicken stock to thicken the sauce. Boil it for a few minutes to thicken it,
