A simple go-to is sandwiches; Sandwiches require little energy from me after a long day of work. But just because you need or want something quick, doesn’t mean you have to sacrifice flavor or settle for basic. And this Caprese Grilled Cheese is a great example of simplicity that is bursting with flavor.
It offers all the comforts of a traditional grilled cheese sandwich, but it combines the flavors of basil, tomato, mozzarella cheese, and balsamic vinegar–all the great flavors from a Caprese salad. Put all of this between two pieces of sourdough bread, and oh my goodness, you have the ultimate and most delicious grilled cheese sandwich.
And unlike ordinary grilled cheese that can sometimes feel like a heavy meal, the fresh flavors of tomato and basil in this Caprese Grilled Cheese are light with refreshing flavor… And the balsamic, oh so yummy it adds that hint of sweetness and balances perfectly with the acidity of the tomato.

Start by buttering one side of each slice of bread.
Preheat your skillet on medium heat, once it reaches temp, place the butter side down on one slice of bread.
While it’s toasting, add the cheese, tomato, and basil, and place the other slice of bread, butter side up.
Cook on one side until golden, then turn the sandwich over and cook until the other side is golden and the cheese has melted.
Slice and serve with a drizzle of balsamic vinegar.

What goes with a Caprese sandwich?
It’s delicious on its own, but you could always serve fresh fruit or chips as a side. Or if you’re really craving greens, a small side salad is always nice too!
Can I use another variation of tomato?
Yes, you can use whatever you have on hand. Bear in mind, that some tomatoes will be more acidic while others will be sweeter and that will slightly alter the flavor. Roma, beefsteak, heirloom, or even small grape tomatoes will be delicious.

Mozzarella Grilled Cheese
Ingredients
- 2 slices bread I used sourdough sandwich bread
- 1 tablespoon butter
- 2-4 oz mozzarella cheese shredded or sliced
- 3-4 slices Roma tomato
- 3 leaves fresh basil
- balsamic vinegar for topping
Instructions
