Sausage Potatoes Cabbage and Onions

I just love simple flavors and when combined together… they make the most fabulous meals.

This is one of those meals! 

From the sausage (oh I just love the smell of grilling sausage) to the sauteed onions… then add in some roasted potatoes and cabbage and this is a champion of a meal I tell you!

I love tangy flavors with hearty foods that complement each other well. So mustard and sour kraut are a must for me! Other options are to drizzle on some tomato sauce and top the whole dish with some mozzarella cheese. Just giving you an option. But for me, I like it just the way I made it!

There are lots of options here, if you love peppers, go right ahead and add some. If you are a huge kraut fan, you can layer kraut over the bottom of the pan and place the rest of the food on top if you prefer. I personally like the kraut cold and on the side, but some like it steamed with the food on top. If you like things spicy use hot Italian sausage or dice up some jalapenos when to add to the pan you cook the onions in.

 

 

You can prepare as much or as little food as you need.

Which makes this a favorite for a party or a weeknight dinner. I give you the information for both.

You can cook the items any way you prefer.

I cooked the sausage on the grill while cooking the chopped cabbage and mini potatoes sliced in half in the oven on separate baking sheets and the onions in a skillet until they were golden.

I tossed everything to serve it.

If the food is for a party, just place it into aluminum foil trays with foil on top and keep it in a low-temperature oven about 170° until ready to serve.

 

 

For two large trays of food:

I prepared two heads of cabbage, 3 lbs. potatoes, 6 lbs. sausage with 3 large onions.

This can be easily adjusted for a meal size of  4 servings with 1-2 lbs. sausage, 1/2 cabbage, 1/2-1 onion, 1 lb. potatoes.

  • I grilled the sausage, then sliced them into disks.
  • I chopped the cabbage into squares, then placed the cabbage on a baking sheet and drizzled the cabbage with some avocado oil or olive oil and added salt and pepper.
  • I sauteed the onions in a cast-iron skillet until they just started to turn golden.
  • I used baby Yukon gold and small red potatoes (they came mixed in a bag, my first choice is Yukon gold potatoes, they are so yummy) the cook up perfectly and I just love their flavor. I sliced them in half and baked them on a sheet pan in the oven until they were cooked and golden.

 

Sausage Potatoes Cabbage and Onions (DINNER SIZE)

Servings: 4 servings

Ingredients

  • 2 lbs. Italian sausage
  • 1/2 head cabbage cut into squares
  • 1 lb mini potatoes red and Yukon gold cut in half
  • 1 medium white onion chopped
  • Claussen sour kraut
  • Guldens mustard

Instructions

  • Use one or a couple of options to cook it the way you prefer. I cook this dish often and change it up depending on how much I'm cooking and the time of year, cooking outside on the grill or I use a cast iron on the stove in the winter months.
  • I cook the items in a pan on the stove or on a sheet pan in the oven with some olive oil as needed for even browning, so the itmes don't stick and I add some salt and pepper,
  • Cook the sausage (on the grill, in a pan on the stove or in a sheet pan in the oven at 375° until fully cooked at 165° internal temperature)
  • cook the cabbage (in a skillet, or on a sheet pan in the oven at 375° until just wilted and cooked enough to not be hard and that a knife would pierce it easily- do not overcook and allow the cabbage to be mushy and soft)
  • cook potatoes (in a skillet with some oil, or on a sheet pan at 375° until tender)
  • cook the onions in a pan on the stove or a sheet pan in the oven at 375° until tender and golden)
  • Mix all the cooked items together into a large bowl and serve with a side of mustard and sour kraut.

Servings: 12 + servings

Ingredients

  • 6 lbs Italian sausage
  • 2 heads cabbage chopped in squares
  • 3 lbs mini potatoes (baby red and Yukon gold) cut in half
  • 3 large white onions chopped
  • Claussen sour kraut
  • Guldens mustard

Instructions
