Beef Tips (stove top, instant pot, oven, slow cooker)

This meal can be made in the instant pot, or on the stove. oven, or slow cooker the choice is yours.
most often time dictates which method we’ll choose, or the way we’re comfortable cooking. Lots of choices:

- simmer for 2 hours.
- Slow cooker 4 hours high, 6 hours low
On a cool night, my body craves rich and hearty meals. But sometimes my schedule is tight and I don’t have the time it takes to cook such a dish. This is why I am thankful for the Instant Pot. I also make it on the stove and you can easily put it in the oven or slow cooker.
This New England-based dish of tender and savory beef tips brings good flavor and comfort to the table. Use beef tenderloin, sirloin, tri-tip, or other marbled meat, it’ll provide great tender pieces with wonderful flavor.
I’m going to walk you step-by-step through one of my favorite wintery dishes–Beef Tips. But before I get started, let’s talk about what beef tips are.
Beef tips are the ‘bits’ of leftover meat after breaking down any larger, and more tender parts of beef. They often come from tenderloin or from sirloin. Where a sirloin is tender and can be cooked quickly on the stovetop, the scraps from it, also known as the tips, usually need a slower cooking method to produce the same tenderness.
They’re usually cheaper than other cuts of meat and can easily be found in any grocery store. If for some reason, they don’t have any on the shelves, you can ask the butcher–they will usually have some behind the counter.
The great thing about these ‘scraps’ is their versatility. You can dress them up with any number of sauces, adding an Asian flare, like my Asian Beef Short Ribs–just replace the short ribs with beef tips. Or if you want all the comfort a pot pie can offer, beef tips work great in this Beef Pot Pie recipe ( I recommend tri-tip).
Alright, let’s get down to cooking.
Cut the meat into small pieces, and brown them on both sides. This will give the dish added flavor and lock in some juice to the meat also making it tender.
Do this in small batches so you don’t crowd the pan or instant pot.
Place the browned beef tips ( I use tri-tip), garlic, seasoned salt, Worcestershire, chili sauce, soy sauce, and broth into your cooking pot. You can use an Instant pot, dutch oven, pot, or slow cooker.
- Instant pot 25 min, sit 10 minutes, then quick release
- 300° oven for 2 hours
- simmer for 2 hours.
- Slow cooker 4 hours high, 6 hours low
Next, remove the beef, leaving any remaining liquid behind. Mix up ½ cup water with 2 tablespoons of cornstarch to create a slurry.
Turn the instant pot on the high setting of Saute, other posts can go on the stove and if you used a slow cooker grab a small pot or frying pan to place the sauce from the meat to prepare the gravy.
Add a tablespoon of butter along with the cornstarch slurry and slowly stir into the pot to thicken the gravy.
This dish is great served over potatoes, pasta, or rice. You can add your favorite vegetables to make it a completely comforting meal.
I personally love it served with 3 lbs mashed potatoes,1 ½ lbs chopped carrots, and 2 stalks of chopped celery. I simply saute these in a pan, but you could roast yours ahead of time too!
How do I store leftover beef tips?
For up to three days, keep leftover beef tips in the refrigerator in an airtight container. On the burner, in the oven, or in the microwave, gradually reheat.
What is a good replacement for tri tip?
You can try London broil, beef brisket, and any marbled beef should work, slow cooking it will allow tougher cuts of meat to become tender.
What can I do if the meat is still not tender?
If the meat is not fork tender when you are finished cooking, simply keep cooking it, allowing the fibers of the meat to relax more and render more tender beef.

If you happen to not be a fan of gravy:
Marinade the meat with the ingredients for the sauce, but back the beef broth to 1/4 cup. That’ll add flavor to the meat itself once browned it’ll lock in some flavor, then add the remaining 3/4 cup broth to cook the meat. Drain and serve for those who don’t prefer gravy or sauce on their meat.

Instant Pot Beef Tips
Ingredients
- 3.5 lb tri-tip cubed into 1” pieces (beef tenderloin, sirloin or flank are all good options)
- 1/2 teaspoon granulated garlic
- 1/2 teaspoon seasoned salt
- 1 cup beef broth or use beef/chicken bouillon and water
- 1 tablespoon Worcestershire sauce
- 1 tablespoon sambal oleck chili sauce
- 2 tablespoons soy sauce
- pinch crushed red pepper
2-3 tablespoons cornstarch (to thicken the gravy)
Instructions
- COOKING OPTIONS:
- Instant pot for 25 min, sit 10 minutes, then quick release.
- Oven for 2 hours.
- Simmer on the stove for 2-2 1/2 hours.
- Slow cooker 4 hours high, 6 hours low
- For added flavor brown the meat in small batches over medium-high heat in a tablespoon oil, so it has a chance to brown on both sides.
- Place the beef, onion, garlic, seasoned salt, Worcestershire, chili sauce, soy sauce, and broth into the pot you will be cooking it in. Instant Pot, dutch oven, pot, slow cooker.
- When the cooking time is complete the meat should be fork-tender.
- Remove the beef, turn on high, and add a tablespoon of butter along with 1/2-1 cup water mixed with 2 tablespoon cornstarch, slowly stir into the pot to thicken the gravy.
- Serve over potatoes, pasta, or rice, and add your favorite vegetables to make it a completely comforting meal.
