Blended Chicken Soup
Blended chicken soup has a velvety smooth texture. Making it perfect for a cool day, a easy way to hide veggies for a picky eater. The chicken and noodles can be blended or added on top.
What makes a blended soup like this so easy…
There is no chopping of vegetables just put them all in the pot with the chicken, cover with water or chicken broth, cook, and then puree. Choose to leave the chicken in pieces or puree as well.
This soup can be topped with the chicken pieces or simply add noodles. Wide egg noodles are fun or try tiny alphabet pasta.
Why would someone want this hidden vegetable soup?
First it’s delicious so this soup is for anyone, anytime. And there are a few reasons that come to mind that this soup might come in handy, for picky eaters who don’t like the look and feel of vegetables. Silky smooth for people who’ve had dental work tiny orzo, pastina, or alphabet pasta can often be eaten. It reheats easily making it a great soup to make ahead, bring to a friend, and to keep in the freezer for cold and flu season.
If you want to make this soup vegetarian soup, cook vegetables in vegetable broth, add a can of rinsed, drained beans on top of the blended soup, or blend them in for a thicker soup. Top with pasta if desired.
Remove the chicken and shred it then chop it to desired bite sized pieces.
You can choose to blend the chicken smooth, I left the chicken shredded in the soup. but either way works.

What should I use to blend this soup?
I use an immersion blender, I’ve had many this Vitamix Immersion Blender is super sturdy, has rubber on the bottom to prevent scratching Dutch ovens, works quickly, and blends smoothly. Alternatively, you can carefully put the soup in a blender to puree it.
Depending on the brand of alphabet pasta, La Moderna tends to crumble easily so I saute them in oil first, then boil them, they hold together much better, then rinse in cold water. So many options for pasta use your favorite or try a new one!
How can I add more flavor to this soup?
If the chicken broth needs a kick of more chicken flavor add some chicken bouillon. Make it spicy with a pinch of crushed red pepper flakes, add a tablespoon of soy sauce for an umami flavor, diced jalapenos will sure give it a kick!
How can I make this soup creamier?
Add a cup of heavy cream or half and half to make the soup creamy.
What else can I add to this soup for more flavor?
Add some butter for a richer flavor, Add garlic while cooking vegetables for added flavor. Top the soup with fresh lemon juice to boost the flavor, giving it a fresh flavor. I often add all three!
Should the noodles be cooked in the soup or separately?
Noodles should be cooked separately so they don’t swell up and absorb the broth. Cook and rinse noodles, so they don’t stick together. Top the soup with noodles before serving. You can store the noodles with the soup or keep them separate, allowing everyone to choose how few or many noodles they want in their soup.
Blended Chicken Soup
Ingredients
- 4-6 boneless skinless chicken thighs
- 3 medium carrots cut in half
- 3 stalks celery cut in half
- 1/2 onion cut in half
- chicken bouillon
- egg noodles or alphabet noodles 7-10 oz

Instructions
- Place chicken and vegetables in a 5 qt pot and cover with water (or chicken broth).
- Bring to a boil, then turn to a medium heat and simmer for 30 minutes or until chicken is tender
- While the soup is cooking cook pasta in a separate pot, drain, and rinse, to add to the soup when serving,
- when pierced with a knife, so it will shred easily.
- Remove chicken to a cutting board and shred with two forks, then chop into bite sized pieces.
- Blend smooth with an immersion blender or carefully place in a blender and puree.
- Taste the soup and adjust the flavor as needed, add 1-2 tablespoons butter for richness, salt, and pepper to taste, and add chicken bouillon for more chicken flavor.
- I add 2 tablespoons butter, 1/2 teaspoon salt, 1/4 teaspoon coarse black pepper, and a tablespoon of chicken bouillon.
- Place blended soup into serving bowls, and top with chicken and noodles.
- You can blend the chicken and pasta if desired.
