Sweet Potatoes and Onions

These easy sweet potatoes are ready in minutes and won’t crowd your oven on busy holidays, and they are perfect for everyday dinners too.

No need to peel them, just dice them up and you’re ready to go.

This is simple and a great way to serve sweet potatoes.

 These sweet potatoes are perfect with chicken, turkey, ham, beef and I just LOVE them with a fried egg on top!

Great breakfast option with scrambled egg also.

I love when I have some leftover and can eat them with eggs for breakfast or make them up for an easy “brinner” option.

Heat your skillet, add a tablespoon of oil, then pile in the diced sweet potatoes. Cook over medium to medium high heat, turning them over occasionally to brown the cut sides of the sweet potatoes.

Then add a tablespoon or two of water and cover with a lid for the last minute or so until they are tender (but not mushy), stick a sharp knife into one of them and if it come out easily they are ready.

And they are ready to serve.

I love these sweet potatoes with black beans in tacos or taco bowls. Also great with the addition of chicken or steak. This is my favorite sauce for tacos. Give the sweet potatoes some more flavor but adding homemade taco seasoning to them!

Sweet Potatoes and Onions

Ingredients

  • 2 large sweet potatoes 4 small sweet potatoes chopped medium-small dice (4 cups diced)
  • 1 white onion chopped 1 cup diced
  • 2 scallions diced
  • 2 teaspoons oil I use avocado oil
  • 1/2 teaspoon coarse kosher salt
  • pinch black pepper

Instructions

  • In a large skillet on high heat
  • Add oil then add onions and sweet potatoes.
  • Cook over medium to medium high heat turning occasionally until the cut sides of the sweet potato get golden.
  • After about 5 minutes, add a tablespoon or two of water, and place a lid on top for 1-2 minutes. This will help them finish cooking. Test with a knife, as as soon as they aer tender and no longer firm, they are ready. Don't over cook, they should not be mushy or extremely soft.
  • Add salt and pepper to taste
  • Top with some sliced green onions before serving.
