Sweet Potatoes and Onions

- 2 large sweet potatoes 4 small sweet potatoes chopped medium-small dice (4 cups diced)
- 1 white onion chopped 1 cup diced
- 2 scallions diced
- 2 teaspoons oil I use avocado oil
- 1/2 teaspoon coarse kosher salt
- pinch black pepper
In a large skillet on high heat
Add oil then add onions and sweet potatoes.
Cook over medium to medium high heat turning occasionally until the cut sides of the sweet potato get golden.
After about 5 minutes, add a tablespoon or two of water, and place a lid on top for 1-2 minutes. This will help them finish cooking. Test with a knife, as as soon as they aer tender and no longer firm, they are ready. Don't over cook, they should not be mushy or extremely soft.
Add salt and pepper to taste
Top with some sliced green onions before serving.
